No Bake Energy Bites

Thanks again to Ketanga Fitness for featuring my favorite homemade snack on their blog! There are so many ways to make no-bake energy bites, but this combo is my favvveeee. Snacking - when done correctly can be an enormous influence to the success of your day!

Snacks take us from meal to meal, keep our energy up and our metabolism firing. They help us not to overeat during meal times, keep our intake consistent and keep our bodies in motion.

As a rule of thumb - a snack should have at least 2 food groups and be portioned properly so that it is in fact a snack and not a meal. (aim for about 200 calories, enough to satisfy you, but still in snack territory!)

These little no bake energy bites fit the bill for all the above and pack so much flavor while they're at it. Don't take my word for it - try it yourself. You can prep one recipe worth and have them last all week long and then some! (Hint there will even be some to share, or you can freeze them :) )

No Bake Energy Bites

Ingredients: 1 cup rolled oats

2/3 cup unsweetened coconut flakes

1/2 cup organic peanut butter {almond butter may be a substitute}

1/3 cup honey

1/2 cup pumpkin seeds [suggestion: SuperSeedz – Cinnamon & Sugar flavor]

1/2 cup flax/chia mix {or one or the other}

1/2 cup dark chocolate chips [in recipe today: EnjoyLife dairy free, nut free chips used]

This recipe should make 25-30 balls, a serving suggestion is 1-2 balls for a snack – ranging in calories from 200-250 per serving.

Instructions: Mix ingredients all together (start with dry ingredients and mix in "wet" - peanut butter/honey at the end). Roll into at least 25-30 balls and stick into the fridge! Enjoy 1 or 2 as a snack!
