Chicken & Freaking {GG & VEGGIE} Waffles

It  is no secret that I am obsessed with pancakes & waffles. Literally the days I don't have GG pancakes for breakfast {which is RARE}, I think about them so much that I end up having them for lunch. What can I say, I know what I like! Anyways, because of this true obsession - these absolutely delicious dinner time waffles were born. I used a mix of root veggies, GG crackers and zucchini this time around - but we all know, I will be playing around with a ton of combos with these now! For this meal I used the waffles as my high fiber carb portion. Also - I used spiralized veggies, because that is what I had at home - but it is not necessary if you have the right blender available.

Root Veggie x Fiber Waffles:

Recipe for 2 servings:

6 ground GGs

1/2 cup spiralized zucchini

1/2 cup spiralized mix of beets and sweet potatoes

1/4 cup low fat shredded mozzarella cheese

1/4 cup shredded parmesan cheese

~1/2 tsp McCormick garlic and herb -- honestly did not measure, use what you like here!

1/4 cup coconut milk

2 eggs or 1/3 cup egg whites

Instructions:

  1. Grind GG crackers to "flour" like consistency in blender, set aside
  2. In a nutribullet or high power blender add: zucchini, beets, sweet potatoes, milk, cheeses & spices - blend until combined
  3. Pour veggie blend into GG flour & add your eggs
  4. Mix well and pour onto a hot, greased waffle iron

To make "Chicken & Waffles" - I marinated boneless, skinless chicken thighs in spicy hot sauce + a little maple syrup, & grilled. Paired 1 portion chicken with 1 waffle and served over mixed greens. FREAKING delicious!!!
