Chocolate Chip Blondies {jam packed with fiber - but no one has to know}

I will preface this by telling you all what a HORRIBLE baker I am. I literally suck at following recipes precisely so I fear baking since it is so precise - its true.

BUT I think I just conquered my fear and created high fiber blondies {insert emoji hands here}. That are easy enough for anyone to make - FYI! They may not the same as a blondie you may be used to, but they are so dense, filling and tasty that a little goes a long way - they are packed with really, really good ingredients and warmed up - were freaking delicious!

INGREDIENTS

  • ½ cup creamy peanut (or any seed/nut) butter
  • 1/3 cup melted coconut butter
  • ⅓ cup avocado oil
  • ½ cup unsweetened apple sauce
  • 2 eggs
  • 2 teaspoon pure vanilla extract
  • 2 cups coconut flour
  • 1 cup ground high fiber cereal (I used Poop Like a Champion)
  • 1/3 cup coconut sugar
  • 1/3 cup eating evolved collagen hot chocolate powder (you could also sub in cocoa powder!)
  • 1 teaspoon baking powder
  • ½ cup lily’s dark chocolate chips

INSTRUCTIONS

  1.  Preheat oven to 350 degrees and set aside a greased baking dish
  2. In one large bowl mix together your nut butters, oil, applesauce, eggs and vanilla extract until very well combined
  3. Grind your high fiber cereal down to a flour by placing in a high power blender
  4. In a second bowl combine flours, coconut sugar, hot chocolate & baking powder
  5. Add your dry ingredients to your wet ingredient bowl - mix well and add in dark chocolate chips
  6.  Now if it’s a little dry – add in a few tbsp water if needed
  7. Pour batter into baking dish and bake in oven for about 40 minutes  -- your outside will be crispy, inside should be soft
  8. Top with drizzled melted eating evolved chocolate sauce (optional), and cut into squares
