Chocolate Peanut Butter {GG} Energy Bites.

I want you think RX bars (which I love) mixed with GG crackers (which I also love) - and that, that is what we have here! 

I was thinking about my OG energy bites recipe, and trying to find a way to reinvent it & add in some serious fiber. These seriously did the trick. They are balanced, packed with fiber, and honestly, I know I say this all the time, but they are FREAKING DELICIOUS. Would make the perfect mid day snack, pre workout energy boost or sweet treat to end the night. 

Using the ingredients, quantities and specific brands I used & making 16 bites out of this recipe - my suggested serving size would be 2 bites- equaling about 200 calories, 10g fiber & 8g protein per serving AKA - the perfect snack. 

Seriously, they taste like little baby RX bars and have so much goodness in them. I cannot wait to eat more!

Ingredients:

  • 8 GG Crackers 
  • 3 scoops Vital Proteins, Collagen Peptides (I used Dark Chocolate & Blackberry)
  • 2 tsp Maca powder
  • 1/2 cup natural peanut butter
  • 4 pitted dates
  • 1/4 cup unsweetened shredded coconut flakes
  • 1 Tbsp Honest Choczero chocolate syrup 
  • 1 Tbsp Sukrin Fiber Syrup
  • 2 Tbsp Sugar Free Maple Syrup 
  • 2 Tbsp Lily's Dark Chocolate Chips
  • 2 Tbsp water 
  • pinch of salt

Directions:

  1. In a food processor or blender, grind down 8 GG crackers to flour.
  2. In a small bowl combine GG flour, maca & collagen peptides. Set aside.
  3. Back to the blender, add: peanut butter, dates, coconut flakes, Choczero, Fiber syrup, maple syrup & a pinch of salt & blend until combined.
  4. Scoop mixture into bowl with dry ingredients. Add chocolate chips.
  5. Add 1-2 Tbsp water & begin to combine. Really working the dry flour into the wet ingredients. If it starts to get too dry, you can add in a few more splashes of water. 
  6. Roll into 16 balls & stick in the fridge (refrigerated will last about 5ish days!)
    • Note: If you like quantity and want to eat more per serving, make your balls smaller! 
  7. As an option you can totally roll these balls through extra coconut shreds or even peanut butter powder as a topper! I did not & they were still delicious, but you definitely can!
