{No} Rice Krispies - Obviously FULL of FIBER.

No fluff intro needed on this recipe. Just gonna get right to it. Dessert or snack - you decide, these work.

Ingredients:

  • 1/2 cup natural peanut butter
  • 3 Tbsp.  Fiber Syrup 
  • 1/4 cup vanilla coconut milk 
  • 1 cup Poop Like a Champion (high fiber cereal)
  • 2 scoop Vital Proteins, collagen peptides
  • 2 Tbsp. Chia & Flax blend
  • 2 Tbsp. Lily's Dark Chocolate Chips 

Directions:

  1. In a microwave safe bowl, combine peanut (or nut butter of choice) butter, fiber syrup (may sub honey or maple syrup as desired BUT know that they will not have the same fiber content if you do so), and coconut milk (again can sub any milk your heart desires). Microwave for ~30 seconds.
    1. Option - you can heat these together on the stove over medium heat until combined as well!
  2. Take out of microwave and stir. Place back in for another 30 seconds. Mix until all your ingredients combine smoothly.
  3. Pour in cereal, protein, chia/flax mix & chocolate chips. 
  4. Mix together.
  5. Line a baking dish - I used an 8x8 - with parchment paper - and pour mixture on top
  6. Flatten down & spread evenly - place in freezer for 30-45 minutes - until frozen solid!
  7. Cut into 8 squares & enjoy!

If you turn this recipe into 8 servings like I did - each square becomes: 170 calories, 6g protein & 11g fiber -- aka the PERFECT snack.

MUST keep in the fridge or freezer though until ready to eat - I am sure you could travel with them but they definitely will get a little melty so i would definitely recommend keeping cold as long as you can before eating.
