Pumpkin Szn Post #2: Pumpkin Pasta Reinvented.
Last fall I posted a pumpkin pasta dish.
Last night I made it again, but I made it so much better.
So this fall, take #2 is going to quickly become your #1. I cannot wait for you to try this.
1 cup pure pumpkin puree
1/2 cup coconut milk
1/2 cup Plain (touch of honey) 4% Siggi’s yogurt
1/4 cup goat cheese crumbles
1 tbsp Trader Joe’s Brown Sugar & Cinnamon Butter
1 tbsp Sukrin Fiber syrup
crushed garlic, preference (i used about a tsp)
salt, pepper, red pepper flakes (to preference)
1 pound ground chicken
Mccormick perfect pinch - garlic & herb spice
2 cups chopped lacinato (dino) kale
1 cup diced onions
1/4 cup sun dried tomatoes
2 cups broccoli, roasted (with garlic & herb seasoning)
(BUT really any you want — I also used shredded brussels sprouts & chopped green beans AND this time around I also even used sauteed delicata squash - which is my FAVORITE!)
1 box Fiber Gourmet Rotini (which is AWESOME btw)

So I cooked this all separately - as a disclaimer I had 3 pans going for this meal, but I am sure you can condense and make a one pot style meal. I am just not that good.
Pasta: Boil water & cook fiber gourmet to package directions - place pasta when done on the side - for portion control: suggest to portion your pasta servings into bowls and keep the rest on the side.
Protein: Cook 1 pound ground chicken in a pan. Break up into pieces and cook until cooked all the way through with garlic, garlic & herb seasoning and a little salt as desired (and red pepper flakes if you want that kick!)
Veggies: In a separate pan saute all the veggies! Cook until desired doneness reached and play around with your combos!
Sauce: In a small pot - combine pumpkin, coconut milk, yogurt, cheese, syrup & spices. Mix well until cheese melts into pumpkin & sauce is heated all the way through. It should get nice and thick!
ASSEMBLE: You can do this a few ways - you can mix all of it together and feed many. Or portion it out - start with your portion of pasta, then layer lots of veggies, add in your portion of protein & top with 2-3 tbsp sauce! However you do it, the flavor is ridiculous - top with extra red pepper flakes if you like it hot and sprinkle with some pumpkin seeds to finish!
