Fiber Oatmeal {Heart Healthy Valentine's Edition}

Valentine's day is this week & it is the perfect "holiday" to take a few minutes and celebrate your heart. For a lot of reasons, and in a lot of ways - but here let's focus on keeping it as healthy as possible. 

And with this new recipe you will be off to a great start 😍

Mom - if you are reading this - this recipe has beets (she hates beets) but it's pretty & I am going to tell you a few reasons why beets are so good for you and why they deserve a place in your diet! So don't skip past this one! 

Ok so - this oatmeal is my fiber oats recipe that was posted a little while back - but ya know we gotta switch it up a little - so to make it the heart health edition, I added in some beets! First it was just to make them pink & on theme, but then also realized how amazing they are for your heart. In addition, fiber, which this recipe is PACKED with - boasts incredible heart healthy benefits so adding in beets only elevates the benefits of this meal!

Side note: I didnt measure - but it was about 1/4 cup of shredded beets, likely the equivalent to one little baby pre peeled beet (Love Beets makes great ones in packages ready for you!) 

Why Beets?

They are full of essential nutrients such as B vitamins, iron, manganese, copper, magnesium, and potassium.

They are rich in nitrates that can help your circulation & even your blood pressure!

They are rich in nutrients that can help reduce your risk of artery damage & heart disease overall. 

AND THEY ARE PINK FOR VALENTINE'S DAY! πŸ’•ANNNND you cant even taste them in this recipe, so try them & treat that heart right this week & everyday. 



  • 1/2 cup Poop Like a Champion Cereal
  • 1/2 cup unsweetened vanilla coconut milk
  • 1/4 cup shredded zucchini
  • 1/4 cup shredded beets 
  • 1/2 banana, split
  • about 2 oz Rebbl Vanilla protein
  • 1/4 cup liquid egg whites
  • cinnamon, preference



  • 1/4 cup blueberries
  • 1/4 banana (second half of banana from above)
  • 1/2 tbsp fiber syrup (or maple syrup or honey works too!) 
  • Optional: add in 1/2 tbsp nut butter of choice, chocolate lily's chips, SuperSeedz cocoa pumpkin seeds 


  1. In a blender add zucchini, beets, 1/4 banana, about 2 oz of Rebbl vanilla protein drink (or any liquid! I just love Rebbl - you want to add enough liquid to blend but not too much to make the oats watery)
  2. In a small pot on on the stove, over medium-high heat - add: cereal, & milk, veggie/fruit blend, eggs, cinnamon
  3. Mix well to combine all ingredients and keep stirring as ingredients blend together
  4. Once the "oatmeal" begins to boil, bring back down to low-medium heat and continue to stir until the milk is fully absorbed into your cereal. You will see the cereal start to break down a little and look a little mushy (lose its shape basically) - you can cook until it has reached a consistency you desire (as long as egg is fully cooked through!)! 
  5. Pour into a bowl & top with your toppings (customize these to fit your needs & desires!) 
  6. Get ready to enjoy every bite &  make your heart & belly feel so happy afterwards!
